I think we did, but none in our group had a colour monitor (in the
80's). I think, not sure, I got my first colour monitor in 1991. EGA or
VGA, I don't remember. Probably my graphics card was an "ATI Wonder +",
but I don't remember when exactly I got it.

That B/W CGA was an Amstrad PC, which had an enhanced CGA mode (hi res
with 16 colours, perhaps 64?), but few games were aware of that mode.

Depends how you define "better".

A Rolls Royce is not better than a Ford because whereas both transport
me to the same places in a similar time, the Rolls Royce requires a
secure parking at the destination, it is more expensive to acquire, and
it is more expensive to maintain.

In the medium resolution mode. In high resolution mode it had only two.
But the Amstrad PC had 16 in high res.

No. You can already buy machines with a seperate GPU. Why not just take one of those, but disable the GPU until you load a game etc? The built in graphics of the CPU could then take over.
