Do you know of a table out there that lists
each Windows 11 and Windows 10 end of
support by their build number?

Kind of the wrong question.
Build number doesn't dictate end of service date.
Version number does

For Windows 10

Note with each new version(Feature Update) the latest version is added
to the table.
e.g. 22H2 is the latest entry, when 23H2 arrives(all features are annual
release) next fall it will be added to the table with a 2025
date(somewhere from May to Dec 2025
- which raises a question but unknown at this time will Win10 have a
24H2 and 25H2 (the latter doesn't seem likely, since 25H2 if released in
fall 2025 would only have a one-two month of remaining support before
end-date)
