When I use lualatex to generate a pdf from a latex file there are
there is also an .out, an .aux and a .log file created. Would it be
possible to have them generated in another directory? For example
logging.
And is it also possible to have the .pdf generated in a folder
Generated?
In this way nothing new would be generated in the directory where the
..tex file is residing.

With pdflatex you can use -output-directory=… and -aux-directory=….
When I use:
lualatex -output-directory=Generated -aux-directory=Logging handleiding.tex

It only works partly: everything is put into Generated. Is there a way
to put the .out, .aux and .log files in a different directory?

I never use these options.

With the exception of the log and the pdf all output files are
normally also input files, either for lualatex or for other tools
like biber or makeglossaries, and it is much easier for the workflow
if you create them in the current folder.

Sometimes, I like to keep a certain directory very small and
tidy, with just two or three files. I might feel disturbed
when software decides that it needs to place additional
files into my tidy directory.

One might keep one's files in a tidy directory and then
create links to them in what you call the "current folder".
So the software would see them in the current folder, but
the user can keep them in his own tidy directory where he
rules.

If linking is not wanted, one might have the make process
copy the files from the tidy directory into the current
folder. Then, one just needs to remember not to edit the
copies in the current folder, but the originals in the tidy
directory.

Disclaimer: I have not tested the above ideas.

Why make things easy when they can be made complicated?

latexmk for example can be easily configure to remove the crud.
