Sync with one server -> If the connection to the NTP server is lost the sync will be lost
Sync with two servers -> If two servers are configured it is not possible to tell which one provides more accurate time as no other reference times are available to compare.
Sync with three servers -> If one NTP source is in false-ticker state, the ntpd would be able to choose from the remaining two servers.

Using multiple NTP servers should be OK for most use cases. For
instance, the default Chrony config for Ubuntu uses multiple servers.
Here is a bit of this default config:
