At the moment I am using:
\begin{figure}[h]
\includegraphics[width=\textwidth]{raceAgainstTime}
\centering
\end{figure}

But I want to cut of the upper 25% of the image. (Display only the
lower 75%.)
I could of-course create a new picture with the upper 25% removed, but
I was wondering if it would be possible to instruct LaTeX to use only
the lower 75% in the document.

the documentation is grfguide.pdf. It describes the options of
\includegraphics, including things like trim and clip.

Was not on my system, but fetched it from CTAN.

I am now using:
\includegraphics[viewport = 0 0 1920 810, clip, width = \textwidth]{raceAgainstTime}

The dimension of the image are 1920x1080. Instead of 1920 I would like
to use something like \imagewidth and instead of 810 I would like to
use something like 0.75\imageheight.
Would this be possible?

Not with graphicx alone, it doesn't have access to the original
height when processing the keys. You would have to measure first.
But you can use the adjustbox package:

\documentclass{article}
\usepackage{adjustbox}
\begin{document}
\adjustimage{trim=0cm 0cm 0cm 0.25\height,clip}{example-image-a}
\end{document}

I used:
\documentclass{article}

\usepackage[x11names]{xcolor}

\usepackage{adjustbox}

\begin{document}
\adjustimage{trim=0cm 0cm 0cm 0.25\height, clip, width = \textwidth}{raceAgainstTime}
\end{document}

I had to move my xcolor before adjustbox because that uses xcolor
without x11names.

I could just delete graphicx? I did not get a warning, or an error,
but better a check too many as too few.

I am amazed with what is possible with LaTeX. :-D
There is a learning curve, but that is worth it I think.

You can use \listfiles as the first line of your .tex file. This will
print a list of all used packages at the end of the log file. In your
case you can see that graphicx is still loaded. The reason here is that
adjustbox internally loads graphicx.
