I use several image viewers, particularly Faststone and Irfanview.
They both claim to send images by email.
My client in windows 10 is set to be Betterbird (but Thunderbird has the
same problem)
After a delay Outlook opens.
I wabt Betterbird to open!
How can I fix this?

if it were thunderbird, I'd either try a re-install over the top, or a
reg setting like this

Assuming that BB has the same Preference options as TB, what do you have
set in Preferences > General > Files & Attachments?

Open Bbird; Tools/ General/ Settings.
Under System Integration tick on "Always check to see if Bbird is ...".

I've never used the feature, but, for Irfanview :

" Options --> Send file by email "

requires a plug-in ; I must have the plug-in because
it opened a sub-window with some fields to be filled out.

It states that the default email program will be used.

The Win 10 default email app can be found in
" Apps & Features --> Default Apps "

Here, 64-bit IrfanView successfully sends images via 64-bit Thunderbird.

Two things which are important.

 1.  In recent versions of Windows 10, setting an application as the
     default email application does NOT set it as the default for MAPI.
     Microsoft has officially moved away from MAPI.

     To set Thunderbird as the default for MAPI, check the box "Use
     Thunderbird as my default mail application" when installing
     Thunderbird. That check-box is highlighted in this screen-shot:

     Or use the registry hack from Andy Burns' reply.

 2.  Are both Faststone and IrfanView of the same 'bitness' (64-bit or
     32-bit) as Betterbird (and Thunderbird)?

     Most MAPI functions do not work across a 32-bit/64-bit boundary.
     Only a few do.
 
     Across a 32-bit/64-bit boundary, success will depend on which
     specific MAPI functions Faststone and/or IrfanView are using
     to send images via email.

I think it has all been said. Make sure BB (or TB) is the default mail client, let
the program check and also check it in Window's default programs.

Make sure the sending program and the mail client have the same bitness, in case
of BB, only 64 bit is supported. (You can hack 32bit sender to 64bit BB into
place, but it's a mess.)

If OL gets launched, BB is clearly not the default mail program.

BB and MAPI work. I've just sent a document from LibreOffice via BB.

That found the solution:

In Regedit

I checked [HKEY_CURRENT_USER\SOFTWARE\Clients\Mail]
default was already Betterbird

But this one needed changing:
[HKEY_LOCAL_MACHINE\SOFTWARE\Clients\Mail]
Set default to Betterbird
