My older version let me search by sender, subject, recipient, and ??

115.3.1 (64-bit) doesn't. It has a search bar with tiny x & K
boxes showing. I don't know what their function is.

How do I get back the flexibility I previously had?

turn on QuickFilterBar

should be a button for it in the main toolbar, if not then from
view/toolbars in the main menu.

On the hamburger menu (the three stacked bars in the upper right hand
corner), select Tools > Search Messages.
