I have just upgraded my Betterbird to 115.4.2-bb17 (64-Bit) on Debian
and, et voila, I have a nice tray icon.

Does it come from upstream or is it a Betterbird addition?

I don't think so. All I can see in settings is a 'Show Alert" checkbox, and under that is a checkbox for 'Use the
system notification'. System means the Linux message box that pops up in your system theme colors etc, and unchecked
then Thunderbird itself has a popup in it's own design, basically B&W.
Not that there aren't add-ons maybe to modify this though.

Does it match anything in the 16 files inside "default" below ?

It's not a .deb, looks like a portable folder.

Programs can have internal icons, and making files of them
like that, is a "convenience" for end-users. With a little
effort, you can hide everything on a computer :-)

If your machine has a thunderbird.desktop file, you can make
a betterbird.desktop file, if one is not provided. That may be
a vehicle for desktop integration. This is a skill you should
master, as part of "tarting up" your OS.

I do superficial analyze of Linux materials... in Windows.
That's where my tools are. I've always been multiplatform,
like when I got SoftWindows back on the Sparc, a long time ago.
Every machine I've ever owned, had 2+ OSes. On Windows 11,
you can have WSL with little effort. That's where I get my
"file" command when I need identification of materials. A file
extension is not identification. Running "file"

file newmail.svg

is how you determine what the icon is really made of.

You should have forensic skills on any platform you use.
That's why I can't own a smartphone -- no clue on the
forensics, not sure I could "live" on such a wobbly
pile of stuff. I could probably make a phone call with one.

It's merely reflected a T.bird recent update. I can't detect anything
individual to itself.
BTW I went looking for what you might mean by "nice tray icon", and all
I could find was a settings switch to minimise to tray, which was unset.
Having tried it I find it no better than the Task Bar icon.

Exclusive to BB, see https://www.betterbird.eu/expert-tips/, section
"System Tray support (Windows and Linux)".
