Except for Video games. Are there any video games set in Ireland or
where Ireland is the major focus? I mean, sure, some football games
feature Gaelic stadiums and players, but those don't really count.

Google says "Need For Speed: Pro Street" was set in Cork and Dublin.
And "Assassins Creed: Valhalla" had a significant chunk set in Ireland
too. Other games - "Broken Sword: Shadow of the Templars" (nee "Circle
of Blood") for one - featured segments of the game set there. Others -
like the 2004 reboot of "Bards Tale" - featured a fantastical land
obviously built out of Irish mythology.

Still, remarkably few make Ireland the primary focus.

Well in my experience the majority of people in the US claim to be Irish
based on the fact that some distance relative was Irish. In that case
I'm claiming I'm French not English :-)
